Spiced Pumpkin Curry (Vegan)
Rita learnt this recipe from her Indian friend – a very talented guitarist by the name of Kumar Shome, who was taught this recipe by his grandmother.

Ingredients: 1 kg butter pumpkin, peeled and cubed 1 tsp mustard seeds 1 tsp cumin seeds 1 tsp whole black peppercorns 1 large red onion, finely chopped 1 fresh red chilli, whole 1 tbsp garlic, minced 1 tbsp ginger, minced A handful of desiccated coconut A handful of curry leaves 1 tbsp ground coriander 1.5 tsp ground cumin 1 tsp ground turmeric 1 tsp chilli powder 1 can of tomatoes Fresh coriander, chopped, for garnish |
Method:
Prepare the Pumpkin: Begin by cutting the butter pumpkin into cubes and setting them aside.
Temper the Spices: Heat oil in a large pan over medium heat. Add the mustard seeds and wait until they start to pop. Then, add the cumin seeds and peppercorns, frying until aromatic.
Sauté the Aromatics: Add the chopped red onion to the pan and cook until translucent. Stir in the whole red chilli, minced garlic, and ginger, and sauté until the mixture is fragrant.
Add Dry Ingredients: Incorporate the desiccated coconut and curry leaves, cooking for a few minutes until the coconut is lightly toasted. Follow with the powdered spices—coriander, cumin, turmeric, and chilli powder—stirring well to combine.
Simmer the Curry: Pour in the canned tomatoes and cook the mixture down until thickened slightly. Stir in the cubed pumpkin, ensuring it is well-coated with the spice mixture. Reduce the heat to medium and let the curry cook, stirring occasionally, until the pumpkin is tender, and the flavours have melded, about 20-25 minutes.
Final Touch: Once the pumpkin is cooked through and the curry is thick, sprinkle with chopped fresh coriander for a burst of freshness.
Serve this hearty and flavourful pumpkin curry warm, ideally with steamed rice or fresh naan bread. Enjoy a delicious taste of winter, spiced to perfection.
